I managed to get my hands on some of the Quantum of the Seas Menus. These are being shared with permission of the owner :). Personally, I think I would be a big fan of the restaurant rotation, it reminds me of the Disney cruise ships in a way. The only thing that I am not a big fan of is making reservation months ahead for those restaurants. I like to travel in a no worries lifestyle, and this kind of complicate things ever so slightly. Although from what I hear, there are many who have boarded the ship without reservations and just walked into the restaurants with very short waits. I think this is more along the lines of what I would be doing.
